Pumpkin Blondies With Cinnamon Streusel
These pumpkin blondies are delicious, moist, and dense. They are my favorite dessert I have made ever, and that’s saying a lot. These have pumpkin puree, lots of white chocolate chips, and a crispy cinnamon streusel topping!!
Ingredients
1/4 cup softened unsalted butter
3/4 cup packed brown sugar
1/8 cup granulated sugar
1 egg
3/4 cup pumpkin puree
1 tsp vanilla
1 cup flour
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking powder
3/4 cup white chocolate chips
Streusel
1/4 cup butter melted
1/2 cup and 3 tbsp flour
3 tbsp brown sugar
2 tbsp granulated sugar
3 tbsp pumpkin pie spice
Directions:
Preheat oven to 350 degrees, line an 8x8 pan with parchment paper
First, make the streusal, in a bowl add the melted butter, flour, both sugars and spices. Toss this lightly with a fork until fluffy crumbs form, set aside
In a bowl whisk flour, baking powder, salt, and cinnamon
In a separate bowl, beat softened butter, and both sugars. Once combined, add the egg and vanilla extract, and mix until smooth
Pour in the flour mixture and white chocolate, fold with a spatula until combined
Pour batter into the 8x8 baking dish, sprinkle the streusel topping in an even layer over the top
Bake for about 35 minutes or until a toothpick is poked in the middle and comes out clean. ENJOY!
