Pumpkin Blondies With Cinnamon Streusel

These pumpkin blondies are delicious, moist, and dense. They are my favorite dessert I have made ever, and that’s saying a lot. These have pumpkin puree, lots of white chocolate chips, and a crispy cinnamon streusel topping!!

Ingredients

  • 1/4 cup softened unsalted butter

  • 3/4 cup packed brown sugar

  • 1/8 cup granulated sugar

  • 1 egg

  • 3/4 cup pumpkin puree

  • 1 tsp vanilla

  • 1 cup flour

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 1/2 tsp baking powder

  • 3/4 cup white chocolate chips

    Streusel

  • 1/4 cup butter melted

  • 1/2 cup and 3 tbsp flour

  • 3 tbsp brown sugar

  • 2 tbsp granulated sugar

  • 3 tbsp pumpkin pie spice

    Directions:

  • Preheat oven to 350 degrees, line an 8x8 pan with parchment paper

  • First, make the streusal, in a bowl add the melted butter, flour, both sugars and spices. Toss this lightly with a fork until fluffy crumbs form, set aside

  • In a bowl whisk flour, baking powder, salt, and cinnamon

  • In a separate bowl, beat softened butter, and both sugars. Once combined, add the egg and vanilla extract, and mix until smooth

  • Pour in the flour mixture and white chocolate, fold with a spatula until combined

  • Pour batter into the 8x8 baking dish, sprinkle the streusel topping in an even layer over the top

  • Bake for about 35 minutes or until a toothpick is poked in the middle and comes out clean. ENJOY!
