Oreo Cheesecake Bars

This is an elaborate recipe and will most likely be confusing while you read this recipe. I will try my best to make it as simple as possible. I used regular Oreos for this recipe. If you used double stuffed for example the crust might turn out differently, so just be careful. These are dense and rich, best enjoyed with a cold glass of milk.

Ingredients

  • 3 cups smashed Oreos with filling (for crust)

  • 3 tbs melted unsalted butter (for crust)

  • 1/2 tsp salt (for crust)

  • 2 , 8 ounce blocks of full fat cream cheese

  • 1/2 cup sour cream, room temperature

  • 1/4 cup & 1 tbsp white sugar

  • 1 tsp salt

  • 1/4 cup and & 1 tbsp brown sugar

  • 2 large eggs, room temperature

  • 2 teaspoons vanilla extract

  • 3/4 cup crushed Oreos without cream for cheesecake filling and 1/2 cup mini semisweet chocolate chips

    Directions

  • preheat oven to 325, grease 9x9 baking dish

  • crush Oreos very well with the cream filling in plastic bag

  • take the mashed Oreos pour in bowl add butter and mix

  • pour crust into greased baking dish, press firmly into the pan making sure it’s even throughout and not too dry

  • in separate bowl beat softened cream cheese, room temp sour cream and both sugars until creamy

  • add vanilla, salt and eggs one at a time, mix until just combined. The FOLD in crushed Oreos & Choco chips

  • Pour cheesecake batter into baking dish, make sure to spread batter evenly. Add more crushed Oreos and mini chocolate chips on top before going into oven

  • bake for 35 mins or until the edges are set completely set and a small circle in the center jiggles slightly when you move the baking dish

  • let cool completely before cutting into squares, ENJOY!!! Store in fridge.
