Strawberry-Lemon Poppyseed Bars

This is a cookie bar with fresh strawberries and lemon juice with crunchy poppy seeds. The absolute perfect summer treat! Very light and bright in flavors and easy to make for a summer pool party. Be careful, I put it int h oven fir 25 minutes stuck in a toothpick and it came out perfectly clean. So, I thought it was done and I took it out. BUT, it was in fact not close at all. So stick with 35 minutes at least.

Ingredients

  • 1 cup unsalted butter softened

  • 1 large egg

  • 1/4 tsp almond extract

  • 1 tsp vanilla extract

  • 1/4 cup fresh squeezed lemon juice

  • 1 1/2 tbsp poppy seed

  • 2 1/4 cup flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • generous 1 cup diced fresh strawberries

    Strawberry glaze

  • 1 cup sifted powdered sugar

  • 1 tbsp strawberry puree (2 blended strawberries)

  • 1 tbsp lemon juice

    Directions

  • preheat oven to 350 line a 9x9 baking dish or 8x8 with parchment paper

  • make batter, combine softened butter and both sugars. Mix until smooth and fluffy.

  • add in egg, almond and vanilla extracts, and lemon juice.

  • next with spatula fold in flour, baking powder; halfway through add strawberries and the rest of the dry ingredients. Complete folding everything together.

  • put dough in baking dish and press down with a spatula to flatten. Or take plastic and lay it over top of dough and press down to get it flat.

  • bake in for 30-35 minutes, while it is baking make the glaze

  • in bowl sifted powdered sugar, next take tw large strawberries and blend very well. Strain the strawberry juice through a strainer into a bowl.

  • add 1 tbsp of the puree and 1 tbsp of the lemon juice into the powdered sugar, mix until it becomes a little thick and you can drizzle it into a figure eight.

  • when the blondie comes you have to wait for it to cool to glaze, about 1 hour.

  • drizzle the glaze on top, cut into 9 or 12 squares and ENJOY!
