Lemon Bars
Lemon bars are actually very easy to make. I though it was going to be a very long process, but nope. They are fast, easy and delicious!
Ingredients:
Crust and Crumble
1 1/2 cup flour
1 cup sugar
3/4 cup cold unsalted butter, diced
1 tsp salt
Lemon filling
3 large eggs
1 cup sugar
3 tbsp flour
1/2 cup fresh lemon juice, 3-4 lemons
1/2 tsp vanilla extract
1/4 tsp almond extract
zest of 1 lemon
Directions;
heat oven to 350, line an 8x8 baking pan with parchment paper. Make sure there are no cracks for the batter to leek through.
combine flour, sugar, and salt in a bowl, whisk well. Add in the cold butter, massage it into the dry mixture until there are no large chunks of butter left. When you squeeze the mixture it should hold together. Reserve 1 cup of this for the crumble. Press the crust into the lined baking tray, making sure it is evenly pressed down. Bake this for 15 minutes.
While the crust is baking, make thee the filling. Whisk the eggs, sugar, and flour until combined. Add in both extracts, zest, and lemon juice, whisk everything together. Once the crust comes out let cool for 5 minutes then pour your filling on top of the cooled crust.
Bake this for 15 minutes. Once it comes out, sprinkle the reserved crumble in an even layer. Place back in oven for 20 minutes, or until the crumble has darkened in color and the center is not jiggly.
Let set for at least 2 hours before serving, ENJOY!
