Peppermint Chocolate Cheesecake
This is a very complicated recipe BUT it is so delicious. I made this for Christmas Eve and everyone loved it so so much. This cheesecake has an Oreo crust with peppermint and chocolate filling. SO SO GOOD!
Ingredients:
Crust:
1/12 cups smashed Oreos without cream
4tbs butter
1/4 cup sugar
Filling:
32 ounces cream cheese, room temp
1 1/2 cup sugar
2/3 cup whole milk
4 large eggs
1 cup sour cream
1 tbs vanilla extract
1/3 cup flour
3/4 cup mini semisweet choco chips, 3/4 cup Andies Peppermint crunch baking chips
Ganache
1 cup semisweet choco chips
3/4 cup heavy cream
Directions:
I am going to try and make this as simple as possible, but I am trying my best :)
Preheat oven to 350 degrees
Crust:
mash up Oreos and remove the filling, melt 5tbs butter and combine with oreos
grease cheesecake springform pan with nonstick cooking spray, pour the Oreo mixture in the pan and spread and press down evenly up the sides and on the bottom
Filling
In a bowl combine cream cheese, sugar and milk. next add in eggs mixing one at a time, sour cream and vanilla extract. Mix until completely comnines
In separate bowl put in flour, and baking chips. Mix together. Add the flour mixture into wet mixture and combine well.
pour filling into pan and spread over crust evenly
bake for 1 hour after turn off the oven, open the door a couple of inches to let the heat out and let it cool for 1 additional hour.
Ganache
put baking chips in bowl and in milk and microwave for 1 minute, stir it should be a little runny but still has a thickness to it.
when cake is completely cool spread over top
crush up candy canes and sprinkle on top
