Blueberry Coffee Cake

Coffee cake with a blueberry twist! who doesn’t love that, I sure do. Alright The dipped in coffee are you kidding me. I am not lying this is the best coffee cake I have ever had, it is soooo moist and fluffy. I recommend heating it up in the microwave for 10 seconds before eating!!!

Ingredients:

For the crumble topping:

  • 1/2 cup brown sugar, packed

  • 1/2 cup all-purpose flour

  • 1/2 teaspoon ground cinnamon

  • 1/4 tsp kosher salt

  • 1/4 cup unsalted butter, softened

For the cinnamon layer:

  • 1/8 cup white sugar

  • 1/2 tablespoon all-purpose flour

  • 1/4 teaspoon ground cinnamon

For the cake batter:

  • 1 1/2 cups all-purpose flour

  • 1 1/8 cups sugar

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon kosher salt

  • 1/2 cup unsalted butter, softened

  • 1/2 cup sour cream

  • 1/8 cup milk

  • 2 large eggs

  • 1/2 tablespoon vanilla extract

  • 1 cup fresh blueberries, 1 1/2 tbs flour

Directions:

  1. Grease 8x8 baking pan, preheat oven to 350 degrees.

  2. Prepare crumble. Place granulated sugar, brown sugar, and cinnamon in a medium bowl and whisk. Add the butter and stir to combine. Add the flour and use a fork to stir and gently toss the flour. Big crumbs should form.

  3. Cinnamon Layer. In another bowl combine sugar, cinnamon and flour. Set aside.

  4. Make cake Batter. Combine butter and sugar, beat this on medium-high speed until fluffy and lightened in color. Add in vanilla, milk and eggs one at a time, and beat until each is incorporated. Make sure to scrape down sides of bowl. You will add the sour cream later.

  5. In a separate bowl stir flour, baking soda and powder, salt. Pour 1/3 of the flour mixture into the wet mixture, and also add in 1/2 the sour cream. Mix until almost incorporated and add blueberries that have been tossed in flour. Fold in blueberries with spatula.

  6. Assemble the cake. Pour 1/2 batter into pan evenly sprinkle cinnamon sugar mixture. Pour the other half onto and spread evenl, this takes some patience. Now add the crumble topping in an even layer.

  7. Bake for 40-50 minutes or until a toothpick is inserted in the middle and comes out clean. ENJOY!
