Chocolate Cookie Butter Pumpkin Muffins
These muffins are made with pumpkin puree, cookie butter, cocoa powder, and milk chocolate chips. The pumpkin makes them so moist and the cookie butter adds a punch of molasses that is delicious. They also have cinnamon and nutmeg to add that perfect fall flavor, but still super chocolatey from the cocoa powder and chocolate chips.
Ingredients
1/4 cup of any oil
1/3 cup cookie butter
1 cup pumpkin puree
1/2 cup milk
2 eggs
1tsp vanilla extract
1/2 cup cane sugar
1 1/2 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/2 tsp cinnamon, 1/2 tsp nutmeg
1/2 cup milk chocolate chips
Directions
Pre-heat oven to 350, line muffin tins, or use non-stick spray
In a bowl combine sugar and oil and mix until smooth. Add in pumpkin puree, milk, eggs, and vanilla extract and fold with a rubber spatula until fully combined. Make sure to scrape the bottom.
Next, add in flour, baking soda, baking powder, salt, and spices and fold with a spatula until almost combined. Add in milk chocolate chips and fold until fully combined.
Fill your muffin in 2/3 of the way full, drizzle more cookie butter, and top with more milk chocolate chips. Bake for 18-20 minutes or until a toothpick is inserted and comes out clean.
Let cool for 10 minutes and ENJOY!
