Strawberry Jelly Muffins

These m muffins are soooooo delicious I am absolutely in love with how they turned out! They are very moist, light and fluffy. The jam is a great flavor with the vanilla lemon muffin batter.

Ingredients

  • 1/2 cup unsalted butter softened

  • 1/2 cup sugar

  • 1/2 cup brown sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • juice of 1/2 a lemon

  • 1 1/2 cups flour

  • 1/4 and 1/8 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup milk

  • 3/4 cup strawberry jelly

    Directions

  • set oven to 350 line every other muffin tin

  • in bowl combine flour, baking soda, and salt. whisk together

  • in a separate bowl cream the butter and b both sugars, beat in the eggs and vanilla

  • add in half the dry ingredients and the milk and stir until combined add in the remaining dry and fold into batter until almost combined then dollop the jelly all around on top and finish folding until the dry ingredients are combined.

  • scoop into he miffed tins and bake for 15-20 minutes or until a toothpick is inserted and comes out clean
