Mini Carrot Cake

These cookies taste like a warm hug, the crunchy pecans and the warm spices are so so yummy. The balance of white and semi sweet chocolate chips make this so delicious. The texture his more cake like than a cookie which I really enjoy. This with some vanilla ice cream is so bomb.

Ingredients:

  • 1 large egg

  • 1/2 cup(1 stick) unsalted butter, softened

  • 1/2 cup brown sugar, packed

  • 1/4 cup granulated sugar

  • 1 tablespoon vanilla extract

  • 1/4 teaspoon maple extract

  • 1 1/2 teaspoons cinnamon

  • 1 teaspoon allspice

  • 3/4 teaspoon ground nutmeg

  • 1/2 teaspoon ground cloves

  • 1/4 tsp salt

  • 1 cup all-purpose flour

  • 1 cup old-fashioned whole rolled oats (not instant or quick cook)

  • 1/2 teaspoon baking soda

  • 1 cup grated carrots, loosely packed

  • desired amount of raisins, chopped pecans, white & semi-sweet chocolate chips

    Directions:

  • preheat oven to 350 degrees

  • in bowl combine butter, egg, vanilla, and both sugars

  • mix on high until light and very fluffy

  • add in all spices and baking soda, mix

  • then add in flour, oats, carrots mix

  • finally add pecans, raisins, choccy chips

  • bake for 10 mins, once they come out sprinkle with salt and ENJOY!!!!
