Brown Butter Apple Spice Cookies

These are the ultimate fall cookies, they have fresh chopped apples, lots of warm spices, and a delicious brown butter base. It's so good and perfect for a chilly fall day.

Ingredients

  • 3/4 cup packed brown sugar

  • 3/4 cup cane sugar

  • 1 cup browned unsalted butter

  • 2 eggs

  • 1 tbsp vanilla extract

  • 2 3/4 cup all-purpose flour

  • 2 tsp cinnamon, 1 tsp cloves, nutmeg, and ginger

  • 1 tsp baking soda

  • 1 tsp salt

  • 2 large apples chopped well into small pieces

    Directions

  • Pre-heat oven to 350 and line the baking sheet with parchment paper

  • Brown butter in a sauce-pan on medium heat, check frequently

  • Chopp apples into very small pieces, set aside

  • in a bowl whisk flour, baking soda, and salt, set aside

  • Mix brown butter and both sugars in a separate bowl until smooth. Add in eggs and vanilla and mix until fully combined and lightened in color.

  • Pour 1/2 of the dry ingredients into the wet and fold with a spatula. Add in the chopped apple and mix completely. Add in the rest of the flour mixture and mix until fully combined.

  • Scoop dough into balls and bake for about 15 minutes, depending on how big you made the cookies the time will vary.

  • These cookies go perfectly with vanilla ice cream. ENJOY!!!
