C.P.B Oatmeal Bars
This is a delicious mix of peanut butter, chocolate, oatmeal, honey and brown sugar, what can go wrong! They are so so good, really gooey and delicious.
Ingredients:
1 cup old-fashioned oats
1/3 cup flour
1/2 tsp cinnamon
1/2 tsp salt
1/3 cup creamy Peanut Butter
1/4 cup melted butter (1/2 stick)
1/4 cup honey
1/3 cup packed brown sugar
2 tsp vanilla extract
1 egg, and 1 egg yolk
1 full chocolate bar of any kind, I used a raspberry dark chocolate bar
Directions
Preheat oven to 325 degrees, and line an 8x8 pan with parchment paper.
In a bowl combine, melted butter, and brown sugar. Mix until smooth and there are no clumps. Add in vanilla the egg and egg yolk, and mix well. Next pour in peanut butter, honey, cinnamon, and salt, and mix.
Next, add in the flour and oats, mix about 1/2 way, and then add in your chocolate bar. Continue to mix until everything is incorporated.
Pour the mixture into your prepared baking dish. Top with more chocolate if you would like, and place in the oven for 23-26 minutes. If you shake the pan and the center jiggles it is not done. They will look wet in the center still, but when they cool out of the oven they will solidify.
Once they come out, I like to sprinkle lightly with salt. Wait about 30 minutes before you cut into them, MUNCH!
