Reese’s Cupcake

I would make the cake from scratch, but using a box mix is just so much easier and convenient. And this is all about the Reese’s anyways, so it doesn’t matter. This is a yummy and rich chocolate cup cake with a Reese’s inside and Pb frosting. I recommend eating this accompanied by milk!

Ingredients

  • chocolate cake mix, replace oil with melted unsalted butter and water for brewed coffee

  • 1 cup softened unsalted butter

  • 2 cups powdered sugar

  • 3/4 cup creamy peanut butter

  • 2 tsp vanilla extract

  • 1/4 tsp salt

  • Reese’s PB cups

    Directions

  • preheat oven to 350 degrees, prepare cupcake pans with paper tins. Chop up about 6 Reese’s.

  • make boxed cake mix according to directions in bowl, pour about a 1 1/2 tbsp of batter into the tins and sprinkle the chopped PB cups into each one. Pour about 1 tbsp of batter over the top and bake for 18-21 minutes.

  • To make the frosting, whip softened butter and Pb until fluffy and smooth. Add in salt, vanilla extract and 1 cup of powdered sugar, combine until smooth. Add in the last cup of powdered sugar and whip until fluffy and stiff peaks form. Scrape down the sides and bottom of bowl to make sure everything is incorporated.

  • Once the cupcakes come out they must be completely cooled before frosted, or else it will melt right off. After you frost them ENJOY!
