Blackberry Cardamom Cupcake

Ingredients

Cake

  • 1 boxed yellow cake mix

  • substitute oil for butter

  • substitute water for milk

  • 1 tbsp vanilla extract

  • 2 tsp cardamom

    Frosting

  • 2 sticks softened unsalted butter

  • 4 1/2 cups powdered sugar

  • 2 tsp vanilla extract

  • 2 tbsp lemon juice

  • 15 blackberries

  • 1 tsp salt

    Directions:

  • preheat oven to 375 degrees, line you muffin pan with cupcake tins.

  • make cake mix according to bow directions with the substitutions noted above.

  • divide batter into about 20-23 cupcake tins, bake in oven for 10-12 minutes.

  • test with a toothpick, if moist crumb are on it it's s done. Take out and let cool for at least 20 minutes. If they are warm and you try to frost them the frosting will melt off.

  • To make frosting, cream the butter, vanilla, and lemon juice, about 3 minutes. The mixture should be creamy and smooth. Add in the blackberries and salt, mix until combined. Add in the sugar one cup at a time beat until it is smooth and thick.

  • Once the cupcakes are completely cooled, frost them in any way you like. Enjoy!
