Blackberry Cardamom Cupcake
Ingredients
Cake
1 boxed yellow cake mix
substitute oil for butter
substitute water for milk
1 tbsp vanilla extract
2 tsp cardamom
Frosting
2 sticks softened unsalted butter
4 1/2 cups powdered sugar
2 tsp vanilla extract
2 tbsp lemon juice
15 blackberries
1 tsp salt
Directions:
preheat oven to 375 degrees, line you muffin pan with cupcake tins.
make cake mix according to bow directions with the substitutions noted above.
divide batter into about 20-23 cupcake tins, bake in oven for 10-12 minutes.
test with a toothpick, if moist crumb are on it it's s done. Take out and let cool for at least 20 minutes. If they are warm and you try to frost them the frosting will melt off.
To make frosting, cream the butter, vanilla, and lemon juice, about 3 minutes. The mixture should be creamy and smooth. Add in the blackberries and salt, mix until combined. Add in the sugar one cup at a time beat until it is smooth and thick.
Once the cupcakes are completely cooled, frost them in any way you like. Enjoy!
