Banana Oat Cookie

These cookies are my go to when I have over ripe bananas and I want something on the healthier side. Inside is chocolate chips, oats, dates, nuts, and maple syrup as the sweetener! I love these for a snack or before a work out :)

Optional: You can add 3 tbs cocoa powder into the batter to make extra chocolatey!

Ingredients:

  • 3 over ripe bananas

  • 3 tbs maple syrup or honey

  • 1 egg

  • 1tsp vanilla extract

  • 1 1/2 cup oat flour, or blend 2 cups oats finely into flour and put that into batter

  • 1 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tsp salt

  • desired amount of chopped nuts, dates, and chocolate chips

    Directions:

  • set oven to 350, get cookie sheets prepped

  • in bowl mash ripe bananas together, add egg, maple syrup/honey and vanilla. Combine well.

  • next add oat flour, baking powder and spices. Blend everything together.

  • finally add in choco chips and nuts also

  • bake in the oven for about 10 mins
