Caramel Delights
This cookie is very amazing. It is basically a Caramel Delight Girl Scout Cookie but in a real cookie version. I has coconut, dark chocolate, and caramel.
Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 tsp vanilla extract
2 large eggs
3/4 cup shredded unsweetened coconut
1 cup chopped dark chocolate bar
3/4 cup very small chopped soft caramel
Directions:
preheat oven to 350, prep baking sheets with parchment paper.
combine butter and both sugars until creamy, add in eggs and vanilla extract. Mix until fluffy and creamy.
Add in baking soda, salt, and 1/2 of flour, mix. add in rest of flour and mix but not too much. You should still be able to see some flour that is unmixed.
Add in coconut, chocolate, and caramel. Fold with spatula or with a stand mixer on low until combined evenly.
Bake for 10-12 minutes, IMPORTANT these are best warm. I recommend heating them up in the microwave for 10 seconds. That way the caramel is very gooey and not chewy.
